Good morning everyone. You have all been really busy. Congratulations to all of my fellow winners. So what are you all getting? I wish I could get a Gift Certificate to Photo Bucket instead. I have so many pictures for my story that now I have to pay. I'm afraid if I don't pay all my pictures will be deleted. I will most likely get some magazine subscriptions. That's an indulgence for me and hey they keep on coming every month.
We have been very busy around here. Plus battling daily headaches and rain is not any fun. Dinner tonight is Rotisserie Chicken. Sides are up in the air.
Already have the pork chops in the crockpot. I used a recipe in the Fix-it and Forget-it book. Never made it before so we shall see. I just searched for an easy one where I had all the stuff. Don't know what sides yet, I am thinking rice. Depends if the saucey stuff turns out a good gravy, it may be potatos.
DD#3's quesadillas turned out very good last night~she's hired!!! Now, to add more recipes to her collection...pretty soon I can hand the whole kitchen over to her! I will even do the dishes!
DH sure is getting good at barbecued chicken.. that stuff last night was goood!!
I was trying not to eat too much, but I did break down and pull the meat off a chicken leg and stuff it in a couple of warmed corn tortillas. Found out I was out of the hot sauce I make, but it was a great taco anyway. No adornment necessary when the meat is grilled and the tortilla is fresh.

Either the cut is bad (like an economy pork chop) or you're overcooking them. Pork should still have a teensy bit of pink in the middle to be tender...don't worry, it's hard to get sick from slightly undercooked pork now.
For a half inch thick loin chop, I do about two-three minutes per side. That cooks them to my taste (med-well). For DH, about 30 seconds a side is all it needs.
