I made Texas Chili and San Diego guacamole for my football party on Sunday. Sadly both our teams lost.
The chili was a huge hit though. Served it with flour tortillas and all the trimmings, but most people wanted to have it in a bowl instead cheese on top. These Texans don't know what they're missing... I liked it much better as a mini burrito.
Last night's dinner was Costco caesar salad.
Tonight's dinner will be leftover chili (in a bowl) with some warmed King's Hawaiian rolls. DH showed me that if you put those rolls in a warm skillet and just flip them over once (don't brown) they are soooooooo delicious.
So I took a pork tenderloin (brined in garlic salt) - and using a knife and some imagination, I made a spiral-like series of lateral cuts, flattening the tenderloin out like a pancake.
I smeared one flat side of the tenderloin with soft French gournay cheese, like I was buttering toast -- and then layered it with spinach (soaked with a little apple cider vinegar).
I rolled the tenderloin back up, smeared the outside with thick worchestershire, wrapped it in aluminum foil, and baked it in the oven for while, very hot.
turned out nice considering I made all this up as I went.

Not a typical chili recipe, maybe not even "chili", exactly, but I am curious to see what it tastes like.
