Since you're an expert on regional Mexican cuisine I hope you'll define this region geographically and tell us about the unique dishes from this region. I'm quite a fan of Mexican cuisine and I'm always looking to expand my culinary knowledge. I wonder if nixtamalization is the preferred corn preparation in this region?

I like Chapala for their $6 Dos Equis/$10 Margarita pitchers during the week, but their food is still pretty "Gringoized" compared to El Cazador and other authentic Mexican restaurants. However, their salsa is loaded with fresh onions and cilantro, which is great.

"Whitesican." Resembles fried Campbell's soup covered with cheese.

Yeah, sorry I meant Chapala.

I like their fajitas, esp. the ones with shrimps and fajita jalisco. I don't find them in other Mexican restaurants around town (or I missed it somehow...).

Give them a try... I think you'll be pleasantly surprised.

This isn't exactly local, and is totally Americanized, but if you are ever down in Cullman eat at Los Cabos. They have a lot of shrimp and fish dishes on their menu. It's rare to see fish tacos on a menu around here so we jump at every chance.

mmmmmmmmm

I might have to go down to the pond and catch a catfish or two for some fresh fish tacos.

I've always thought it was a bit odd to debate about "authentic Mexican cuisine". In Mexico, they are selling bean and cheese taco's out of vans just like they are here. It's also weird to call it Americanized, as the Southwest never really became the home of white English/Dutch settlers. There are still lots of people there (Texas, New Mexico, etc) of mixed Spanish and mesoamerican backgrounds. These are the same people who are in Mexico, so its just as right to call it American food as anything else.

So my criteria for Mexican food is as follows: cheap, cheesy, and erm...cheap!

Talk about street tacos, they were some of best taco I've ever tasted.

Many years ago we drove down to Ensenada for a fishing trip. They had seafood taco on roadside stands that were just fantastic! They also had this hunk of meat, I think is pork, looks like gyro meat but they insert slices of pineapple in them. They'd slice off peices of meat & put them in coin-size soft taco shell. It tasted fantastic and, for 25 cents each, you can eat a lot of those!
