When looking at foods from thing that we can grow, we realized that we are not likely to be growing wheat anytime soon.

But we can grow beans.

It changes bread from being a carbohydrate, to being a protein.

Until we can grow enough for our household and to market to others; we are buying beans.

Lowell Pork n Beans: Done in a Crockpot While at work.

1. Package of Navy White Beans
1. Medium Onion (finely chopped)
1. Package of Pork Fat
1. 1/4 Cup of Catchup

Put Beans in Crockpot and add water enough to cover beans, (Do not turn on Crockpot) Let beans soak overnight. Cut and dice your onion, and same with pork (Pork should be diced into one inch squares) put onion and pork in a bowl and put into fridge till morning.
When you wakeup add onion and pork along with 1/4 cup of catchup (Optional) to the beans stir so as to level, then add 1 1/2 cups of water. Put Crockpot on Low, Go to work and they will be ready when you get home. These go great with hot dogs. I personally also have them with my eggs and bacon in the morning. The recipe comes from the French Canadian...
O and dunking homemade bread and butter into the juice is awesome

Nowadays DW is making beans that I used to make. We don't use ketchup but mollasses and a little sugar. We throw a small onion in whole. Let it run the afternoon in a bean crock in the oven and just leep adding a little water when needed. She says soaking them overnight drops the cooking time removes the gassiness (doubt it!). The mollasses gives them a great tasste. Goes great with a bit of pickle juice and homemade brownbread. You just have to find the right steel can.

I don't care if beans are offering the winning lottery ticket... I really don't want to eat beans. I will say that I'll eat them before I'd ever touch pea soup. It doesn't make it down the throat...

We got food poisoning one time from beans..or more likely it was the salt pork in it. It was no fun and beans are very low on the list of foods we eat.
The dog loves her stew I make using pinto beans as the base.
