Needs a few altercations but spiced enough for tender foots. My belly is happy. I thought I had done something until I used google to see if there was a Buffalo Potato Salad recipe. Mine is topped with smoked paprika. Wife doesn't to hot and spicy but I can hear the onions crunch across the computer room. Yes we eat lots of nights working. Well she is.Much to my surprise and delight....

Here is my standard recipe. It comes from a 1951 Betty Crocker cookbook I inherited from my MIL. I don't always use the cooked dressing recipe, sometimes I make an easier mayo mix. I always use the French dressing soaking step.

4 cups cooked cubed potatoes and a fourth cup diced onionss, sprinkle with salt and pepper, then lightly toss with French dressing, 1/4 to 1/2 cups worth.

French dressing recipe
1cup olive or vegetable oil
1/4 cup vinegar (I use white or rice)
1/4 cup lemon juice
1tsp salt, dry mustard and paprika
Whisk and keep in fridge.

Chill potatoes for a couple hours. Add sliced boiled eggs, chopped celery, pimentos and what ever else you like along with cooked dressing. Sprinkle paprika on top.
Cooked dressing recipe
1/4 cup flour and sugar
2tsp salt and dry mustard
1 1/2 cup milk
1/2 cup mild vinegar or lemon juice
4egg yolks
1TB butter
Mix first four ingredients in saucepan. Slowly blend in milk and vinegar. Cook over low heat, stirring until it thickens, boil one minute. Stir half into egg yolks. Stir that into remaining mixture in the saucepan. Bring to boil, stirring constantly. Boil one minute. Remove from heat, stir in the butter and then chill.
I never measure how much I add to the potatoes. I personally like lots of dressing on mine.

We all have our own favorite potato salad recipes; that's just the way it is.

BTW - for me, green peppers in a potato salad is "weird stuff," and pickles just naturally belong in a potato salad.

It's just that everybody considers MY potato salad a "must have." The one case of pickles in Potato Salad I recall, we all quietly dissed it off premises, in order to not hurt anybody's feelings.

They're not all the same. Some are very tasty and have nice thin rinds, but (especially lately) some are flavorless and, even worse, have tough rinds. Taste them before you add them. Not all of them are suitable for raw eating. They are optional in potato salad.

That recipe you posted is no different from any other "pedestrian" potato salad, except for the addition of raw green peppers. I think your interpretation of "a must have" might just be "she always agrees to make it."
