Use the clear vinegar. It's perfectly fine as long as it's 5 percent acidity.
I'm not crazy about the flavor of cider vinegar for pickled vegetables. It's OK for salad dressing, but I prefer white or white wine vinegar for canning.
plus I don't care for the color it gives the pickled vegetables.
I just finished my green tomato relish. The jars are blue, so it looks a bit weird. I guess I needn't have worried about the color of the cider vinegar, since the brown sugar colored it anyway.
I'll keep the extra in a jar in the fridge and use that first. I haven't canned anything for 100 years, so it was fun.

that makes sense, if you used the blue jars, who cares about the color of the vinegar.
BTW, I am so pleased you can remember what it was like for you canning 100 years ago.
I love this Canning subject as I just got back into canning after about 15 years.
It is so fun and rewarding to have a garden! I just wish I lived in a place where I could garden all the year round! Thank you to all of you for contributing your experience, your tips and your recipes! Love Love Love it!!
I am going to try to attach some pics of my canning efforts this year, my harvests and my garden.
My neighbor started doing this recently. She canned salsa, tomato sauce, tomato jam. She gave me some jam which I will try on crackers this weekend. Her tomato garden was very abundant this year. She also canned pickles.

what beautiful produce; I only wish mine looked like that. Most of what we can we purchase from local farms
Thank you! I am making my garden bigger next year so I can also grow pumpkins and watermelon
I am going to try my hand at canning pickles this weekend. My Dad used to make some dill pickles that he called "Salty Sours"and I really loved them as a kid. I had him write down the recipe years ago and I'm so glad I did. I just found it in a box I had. My Dad has been gone for 6 years now so I hope I do him proud when I make these.
I am currently trying to track down where I can buy Grape leaves and fresh Dill weed in my area. Doesn't seem to be very easy!
Tomato jam is food of the gods. It's good on almost anything, short of ice cream.
