I just made Laura's Doritos casserole and it is great! I believe that directions call for 1 3/4C milk, but further in the recipe it says 1 soup can, so I split the difference and it came out good. Seems like it would be a real kid pleaser, too. I don't even think it looks ugly when it's done. I thought it looked good and tasted good. We plopped a bit of sour cream on each serving. YUM.
I used Nacho Cheese Doritos, but if you like it hotter you could get hotter Doritos.
If you ever had Frito Pies, it kind of reminds me of that.

I just discovered this thread. Reading it is like watching a movie! WHAT an amazing thing. Laura, you are a goddess and a true star. You deserve some kind of award for starting this conversation. I grew up along the Ohio River in Pennsylvania and your photos bring back memories to me.

I told my mother about you and now she is a fan, too. She just had me print out the cake mix cookie recipe so she can make it with her great-grandchildren when she goes to visit them. They just LOVE to cook with G'ma (that's what they call her, GeeMa), but they're between 4 and 12, so she's gotta keep it simple. I warned her to save this until the kids' mom is home so she can clean up the powdered sugar mess.

Thanks again so much. I'll send along some recipes soon and believe me, I'll be trying some of yours.

stuffed pizza rolls!

Pizza Dough:
3 cups all-purpose flour
1 T instant yeast
1 teaspoon salt
1 teaspoon sugar
1/2 cup hot water (120-130°F)
1 T olive oil

Combine flour, yeast, salt, oil, and sugar in the bowl of a stand mixer to mix fitted with a dough hook.
With the stand mixer is running, gradually pour in enough of the hot water until the mixture forms a sticky ball. The dough should be quite soft. If it seems dry, add 1 to 2 tablespoons warm water; if too sticky, add 1 to 2 tablespoons flour. Continue mixing until the dough forms a ball, then process for 1 minute to knead. Cover, and let the dough rest for about 10 minutes.
Or, if you have a bread maker, set it on "dough" and remove after the kneading cycle is complete.
Meanwhile, get your toppings assemble. Still let the dough rest for about 10 minutes

Filling:
1 cup marinara or pasta sauce (homemade or store bought)
shredded mozzarella cheese
pepperoni slices
Whatever other pizza toppings that you like
1 egg slightly beaten

2 tablespoons olive oil
1/2 teaspoon Italian seasoning
1/4 cup shredded Parmesan cheese



Preheat oven to 400ºF.


Cut the prepared pizza dough into 8 equal pieces and roll each out into a rectangle. Top with about 1/2 as much tomato sauce as you normal would use for a pizza. Scatter the cheese, pepperoni and mushrooms over the dough. Brush the one of the long sides with a little egg wash then, starting with the opposite side, roll the dough up into a log, enclosing the toppings inside. Pinch seam closed as well as ends. Transfer to a baking sheet, seam side down.

Brush the top of the pizza roll with olive oil and sprinkle with Parmesan cheese and Italian seasoning. Bake until golden brown, about 15-20 minutes. Makes 8 logs, 2 logs per adult. To reheat, wrap in foil and bake at 400ºF for 15 minutes.

* To make ahead/freezer meal - Prepare the rolls as directed above and do not bake. Instead, wrap prepared pretzels in plastic wrap and foil. Place in a freezer bag and freeze. When ready to prepare, preheat the oven to 400 degrees. Place frozen pizza roll on a baking sheet and bake in the preheated oven for 20-30 minutes.

Zebra, they look delicious!

I make mine with sausage, peppers, onions and mozzarella. Around here they're called Stromboli's or Sausage Rolls.

I was not able to go back to work this trip and have really missed it... Read why here...Memingioma Tumor anyone? Don't know when I will be able to go back now...

I have been checking in here but have not had anything to ad..

I am still around, sad to say, I am no longer working and am on disability now due to Migraine Associated Vertigo and that has about stolen my life from me.

Oh, Laura, I've missed you too! Still think of you every time I make the Doritos Casserole (otherwise known as Mexican crack).
So sorry you aren't cooking aboard ship anymore. I bet the crews really miss you too.
