I used to laugh at my vegan friends who drank koolaid and ate potato chips and pasta and said, hey its vegan.
Really though, don't know if you are an experienced veg/vegan or a newbie but you should really put some vegetables in that there noodle dish, its seriously lacking in nutrients!

Sauteed Tofurkey sausage links, cut up, added spagheti sauce, Italian spices, black olives and put it over pkg'd cheeze ravioli. That sausage is really good!
I cook for a meateater, so I use the meat substitutes a lot. As long as it tastes good, he doesn't mind. I actually think he prefers eating less meat. I can't remember the last time I bought hamburger, it's been years.
I do cook the frozen ground turkey rolls for my dogs.

Silly question probably, but do you make your own chile rojo? also, have nevered tried hominy, can you believe that? Have looked at it in the stores, but wasn't sure what it was exactly and how to use it.

Going to give your veggie pesole a whirl,
I do make my own chile rojo- it's pretty easy. However, with posole, all I do is add the red chile powder to the juice of the hominy, since I don't want to add flour to thicken it like with chile rojo for enchiladas.
