Bwahahha. DH brought me english cucumbers instead of zucchini.

We are now having Amy's burritos and tomato cucumber salad.

It was okay.... I doctored it up a little, more seasoning, fennel seed in the marinara, added some fresh spinach... I still would have preferred more flavor.

Also, I used a mandolin so my zucchini was exactly a 1/4 inch, and it wouldn't roll, so I made it in layers.

I made it about 2 hours in advance, and it got really watery, before I put it in the oven I drained off half the water, and then thought the rest would cook out in the oven and it didn't.

Another thread inspired me for tonight:

Grilled veggies sandwiches put in a panini press with mozzarella and balsamic, and a white bean veggie soup.
