YOU run a tight profile.... are you in witness protection?!!
It was okay.... I doctored it up a little, more seasoning, fennel seed in the marinara, added some fresh spinach... I still would have preferred more flavor.
Also, I used a mandolin so my zucchini was exactly a 1/4 inch, and it wouldn't roll, so I made it in layers.
I made it about 2 hours in advance, and it got really watery, before I put it in the oven I drained off half the water, and then thought the rest would cook out in the oven and it didn't.

Grilled veggies sandwiches put in a panini press with mozzarella and balsamic, and a white bean veggie soup.

The soup which I figured was a "meh" was actually pretty good, I ate it for lunch.
The sandwich will have grilled zucchini, piquillo peppers (jarred), spinach/chard/baby kale (salad mix), I may rehyrdrate a few forest mushrooms (dried), tomato and cheese (mozzerella, blue or brie) and seasoned with a fruit flavored balsamic and the whole thing grilled/pressed.
You can tell I went shopping yesterday, and the race is on to use all the veggies before they go bad!!!!
