      Post "employees must wash hands" signage in restrooms.

    • Food contact surfaces (Food contact surfaces not clean to sight or touch 4-601.11, p 129)
      Cutting boards are no longer smooth and easily cleanable due to scoring. These need replaced. Lettuce prep sink needs details and thorough cleaning. Cardboard was removed from back of this sink. Thoroughly clean underneath pop dispensers not just nozzles at next cleaning.

    • Non-food contact surfaces (Nonfood-contact surfaces not clean 4-601.11(C), p 129, 4-602.13, p 133)
      Clean area behind grease trap and behind fryers.
    • Walls, floors, ceiling, lighting (Floor/wall junctures 6-201.13, p 167)
      There is a large gap between floor and wall juncture behind fryers where grease or water is accumulating as it can attract insects and rodents.

      Lights over the pastry area do not appear to be coated bulbs. Need to provide coated bulbs or a shield.
