Observation: Grill and side of fryers have grease build up. Cooking equipment must be cleaned at frequency to prevent accumulation of debris and grease. Clean.

Observation: Flooring between kitchen and back storage is missing portions of concrete. All flooring must be smooth and easily cleanable. Repair as needed.

Observation: Bottle of chlorine sanitizer was not labeled. All working containers of chemicals must be labeled with common name of product. Labeled during inspection. CORRECTED.
- Equipment location, installation, repair, and adjustment
Observation: Gaskets on reach-in cooler and reach-in freezer are torn and in disrepair. Equipment must be maintained in accordance with manufacturer requirements. Replace gaskets.
- Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
Observation: Establishment needs to have a CFPM on staff/employed. Per owner staff member left 3 weeks ago. Information on upcoming ServSafe classes given. Owner plans to contact food rep for possible classes.
- Handwashing signage
Observation: Every hand sink to be used by employees must have a sign posted reminding them to wash their hands. Post in men's RR.
- Sanitizers
Observation: Chlorine sanitizer was in excess of 200 ppm. Chlorine sanitizer must be maintained between 50-100 ppm. Educated employee and made sanitizer at proper concentration. CORRECTED.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation: Dust build-up in hood. Clean and maintain cleaning at frequency to prevent dust build-up.

- Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
Hot water in men's RR was turned off. Hand sink must have water that reached a minimum 0f 100 degrees for proper hand washing. Establishment to replace washer that is leaking.
- Food is properly labeled
Ingredient list for bakery items were not labeled. Must provide an ingredient list for bakery items. Suggest using list provided on products.
- Food on display is protected from contamination by consumers
Cupcakes are on display and are not wrapped or in a display case. All food must be protected from consumer contamination. Plastic wrap was wrapped around display tray.

Grease build-up in hood system. Clean hood and maintain cleaning at frequency to prevent future build-up.
