  • Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
    Observation: Ventilation hood system above dishwashing machine is very dusty and needs to be cleaned. Clean as often as necessary to prevent dripping or condensation onto clean utensils and clean dishes.

    Observation: Maximum reach-in cooler was temped at 41.2. Food internal temperature was 42*F. Cooler was out to temp. Fix. May not use cooler for time/temp control food until approval has been given through health department.
  • Sanitization methods - hot water, chemical
    Observation: QA sanitizer was tested too low. QA concnetration must be maintained between 200-400ppm. Must change sanitizing solution more frequently. Corrected.
