- TIME AS A PUBLIC HEALTH CONTROL - PLAN APPROVAL AND PROPER METHODS
Observation: No time as a public health control plan is available for review or processes were observed that indicates a food was not properly prepared before using time as a public health control. Cooked pizzas are held for a 4 hour time period before disposal. No time marking procedure was in use and a written plan was not submitted.
Correction: Pizzas were immediately marked with preparation time and disposal time. Formal written plan will be submitted in one week. Staff is instructed to mark pizzas at cooked time and disposal. Food items out of temperature control shall be discarded and any food improperly prepared that is considered unsafe shall be discarded. Time as a public health control shall not be used until a plan is provided and readily available for review by the regulatory authority. Correct By: 08-Dec-2015

Observation: Cheese cake is missing labeling information. Cheese cake as part of take out operations is in public space for sale.
Correction: Staff removed cheesecake from public display sales case for sale from behind the counter Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.

Correction: Post permit in public view. Staff posted permit immediately in public view.
