    Observation: Thermometer used in food establishment is not accurate to +/- [4-9 ]°F. PRESENT STEM THERMOMETER REGISTERS 4 DEGREES COLD AT ROOM TEMP AND 9 DEGREES HOT AT 32 DEGREES. ALSO, BUILT IN THERMOMETER FOR TRUE 2 DR COOLER IS 5 DEGREES WARM AND THERE IS NO ADDITIONAL THERMOMETER IN COOLER.
    Correction: STAFF WAS INSTRUCTED IN HOW TO CALIBRATE A THERMOMETER IN A CUP ICE BATH. STAFF WILL BE PURCHASING 2 NEW STEM THERMOMETERS FOR FOOD AND 2 STAND ALONE THERMOMETERS FOR THE TWO COOLERS WITHOUT STAND ALONE THERMOMETERS. Calibrate or replace thermometer.
  • NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
    Observation: The HANDLES AND KEY PADS OF MICROWAVE, BACK OVEN, AND COOLER DOORS/HANDLES is not cleaned on a frequent basis.
    Correction: STAFF BEGAN CLEANING THESE SURFACES AND WERE ENCOURAGED TO DO SO ROUTINELY WHEN TIME ALLOWS DURING DOWN TIMES. Clean all equipment on a routine basis to prevent accumulation of soil residues.

    Observation: Employee observed handling PICKLES AND HOT DOG TOPPINGS with bare hands.
    Correction: EMPLOYEES PUT ON GLOVES AND WERE TOLD TO USE MORE TONGS AND SPOONS IN BINS IF NEEDED TO PREP FOOD QUICKLY. Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

    Observation: There are ready-to-eat TOMATOS stored under RAW EGGS IN TRUE COOLER.
    Correction: FOOD MANGER PUT EGGS ON BOTTOM SHELF IN ANOTHER COOLER. Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

    Observation: COOKED PAN OF RICE WAS HELD AT ROOM TEMPERATURE FOR OVER A FOUR HOUR TIME LIMIT.
    Correction: FOOD MANAGER DISPOSED OF COOKED RICE. Maintain cold potentially hazardous foods at or below 41°F

    Observation: PAPER TOWEL HOLDER WAS EMPTY. No single-use toweling or other hand drying device available at handwashing sink for hand drying.
    Correction: STAFF REPLACED PAPER ROLL. Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
