- Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS
Observation: There are ready-to-eat [food] stored under and on top of broken raw eggs in the cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food . Discard ready-to-eat foods that show evidence of contamination. Bread product was moved off of exposed eggs and broken egg shells. Suggested to pic to move eggs to the bottom shelf area.
- Critical: TOXIC SUBSTANCES - STORAGE
Observation: Food contact surface sanitizing solutions were stored above food related items and plastic utensils used for food consumption.
Correction: Rearrange area so that toxic materials are stored below or away from food, equipment and single service items.
- DEMONSTRATION OF KNOWLEDGE
Observation: The Person in Charge (PIC) is unable to demonstrate knowledge of proper washware sanitizing practices and storage of PH chemicals above food related items.
Correction: The person in charge shall obtain training or training materials in the areas of as stated above so they are able to demonstrate knowledge and train employees on proper food safety practices.
- WAREWASHING - CLEANING AGENTS
Observation: The [equipment] does not have the proper quantity of cleaning agent or other approved chemical for sanitizing purposes.
Correction: Provide and use a cleaning agent for the sanitizing solution when warewashing. Restocking occured 5/15/14. Bleach used in the interim.
- HAND DRYING PROVISION
Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing. This was corrected while inspector was on site.
- CERTIFIED FOOD MANAGER – REQUIREMENT
Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days of inspection date.
