Various foods in the True refrigerator and open-faced self-service refrigerator in the cafeteria were held above rather than 41 degrees F or below as required. Temperature of True refrigerator was lowered during inspection. Items in the open-faced self-service unit are discarded within 4 hours.

Water Temperature & Pressure when Hot Water is Used for Sanitizing in Mechanical Warewashing (46.675(d)(e))
The food-contact surfaces of equipment and utensils did not reach 160 degrees F during the sanitizing cycle of the high temperature dishwasher as evidenced by the failure of the temperature indicator. High-temp auto warewasher was not reaching 160 degrees F at the beginning of the inspection. It was, however, repaired by the end of the inspection.

The hot water at the handsink at the coffee kiosk (on the first floor) does not stay on. Employee would have to hold the faucet in the 'on' position for it to continuously run. Hot and cold water should be continuously running at this handsink.
