    Employee observed not following the directions on the label of the sanitizer bottle. Employee observed pouring bleach into sanitize basin. Management is discontinue this practice immediately and properly follow the directions on the bottle of sanitizer.

    Food employee observed not wearing hair restraint, such as net or hat.
  • Preventing Contamination from Food Contact with Equipment & Utensils (46.301)
    Scoop without a handle observed in direct contact with cooked rice in the hot holding unit.
  • In-Use Utensils & Between Use Storage (46.302)
    Common bowls or food containers observed without handles in direct contact with bulk food ingredients. Utensils observed stored in standing water. Food dispensing utensil observed in direct contact with food and not having handle stored above the top of the food.
  • Food Storage Requirements & Prohibited Areas (46.321)
    Food is not stored at least 6 inches above the floor. Uncovered food observed in the walk-in cooler. Bucket of mop water observed stored next to dry food storage rack.

    The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was >500 ppm, rather than 50-100 ppm as required. Employee observed pouring bleach into the sanitize basin. The PIC and employee were instructed on proper procedures and requirements for sanitization.
