--Food such as sour cream and sausage, located in the Tropicana refrigerator, was not being maintained at or below 41 degrees F. Food was out of temperature for less than 4 hours and was moved into another unit.

--Time in lieu of temperature documentation was not available for the pizza. When using time in lieu of temperature as a control for displayed food, documentation of discard and/or preparation times must be available to demonstrate that food is being discarded every 4 hours.

--Wiping cloths were observed on counters throughout the kitchen. Store all wiping cloths in sanitizer solution.
- Cooling, Heating, & Holding Capacities (46.611)
--The Tropicana refrigerator is not capable of maintaining food temperatures at or below 41 degrees F. Service this unit. Do not use this unit to store food requiring refrigeration until it can maintain food temperatures at or below 41 degrees F.
- Rinsing Procedures (46.718)
--Employees are washing equipment and utensils in a soap and bleach solution. This not the proper way to clean equipment and utensils. Wash all equipment and utensils with soap and water, rinse them with water and lastly sanitize them in a sanitizer solution.
- Light Bulb Protective Shielding (46.922(a))
--The lights in the dry storage room are not shielded. Shield these lights.
