Rule Violation and Requirement: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: The main prep cooler is holding foods at 47F-50F. Operator instructed to discard all potentially hazardous foods that have been the in the cooler longer than 4 hours. There was not much inside that was potentially hazardous, however management needs to repair the machine to hold foods below 41F. Do not use the machine for cheddar cheese, blue cheese, diced tomatoes, or meats and dairy until this is repaired. Check the unit using a metal stem digital thermometer. Please read below:
