THE EMPLOYEE ATTEMPTED TO REPAIR THE CLOGGED HANDSINK, BUT DAMAGED THE DRAIN LINE BY PUTTING A HOLE IN IT SO THAT THE SINK LEAKED EXCESSIVELY ONTO THE FLOOR. MANAGEMENT CALLED A PLUMBER IN TO REPAIR THE DRAIN LINE. THE PLUMBER ARRIVED AT APPROXIMATELY 2:45PM TO REPAIR THE SINK DRAIN LINE. THE PLUMBER REPLACED THE DRAIN LINE TRAP AND THE SINK NOW DRAINS PROPERLY. CRITICAL VIOLATION 7-38-030.
OBSERVED LIVE FRUIT FLIES AT THE 2ND FLOOR PREP AREA AND 3RD FLOOR BAR AREA. APPROXIMATELY 30 LIVE FRUIT FLIES WERE OBSERVED ON THE WALL AND CEILING OF THE 2ND FLOOR PREP AREA AND APPROXIMATELY 20 LIVE FRUIT FLIES AROUND THE 3RD FLOOR BAR AT THE 3 COMPARTMENT SINK. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE THE PEST ACTIVITY. SERIOUS VIOLATION 7-38-020.
DETAIL CLEAN THE TOP OF THE STOVE IN THE 1ST AND 2ND FLOOR PREP AREAS, INTERIOR OF MICROWAVE IN THE 2ND FLOOR PREP LINE, SHELVES ABOVE SALAD PREP COOLERS.
DETAIL CLEAN THE FLOOR OF THE WALK-IN FREEZER.
MUST FINISH THE WALL OF THE 1ST FLOOR PREP AREA WHERE A SECTION WAS REMOVED. PROVIDE A SMOOTH AND EASILY CLEANABLE SURFACE.
REPAIR THE LEAKS AT THE BAR SINK ON THE SECOND FLOOR AND UNDERNEATH THE SPRAY SINK AT THE DISHWASH AREA.
