18 hours again yesterday. Another rough day in the books. Dinner was a salad last night, but no bread - that did not help. I need to start adding a bread option in. I always do better with something 'bread-like' with each meal. But I survived!

Mexican for dinner tonight - chips and salsa and tacos!

My plan for yesterday changed and I ended up doing a 25 hour fast, instead of my normal 17:7. I'm on track for today. I plan to break my fast in just about an hour.

Yum....tacos!!! 🤤 Those sound good. Glad you had fun last night Lucy.

Ended up doing an 18:6 yesterday. Hit my goal weight. Started my weight loss journey January 4, 2019. I've lost 25 pounds. I'm going to lose a little more to give me some wiggle room for water weight fluctuations, but I'm hoping I'll be able to maintain now. Yesterday was a good day. 😁

Rarely eat tacos, but it's pretty easy to make a taco salad that's low carb.

I love a taco salad as well - both are regulars in my dinner rotation!

You can make taco shells from cheese.

This recipe calls for cheddar. I find that the low fat (skim) mozzarella works best for this. Less oily and less of a mess.

Edit: Checked the fridgie and it looks like we have everything to make this, so we may be having it.
