Interpretive bruschetta. Sliced 5 grain bread toasted with balsamic vinegar, olive oil, minced garlic, basil from the garden, roasted halved cherry tomatoes, and herbed goat cheese. Makes for a great solo meal and sometimes I crumble some bacon on top.

Had a late, light dinner. (Huge breakfast). Salad with lettuce, bacon bits, chopped hard boiled egg, shredded carrot and red cabbage, a cheese breadstick and coffee.

I think we'll have leftover swiss steak from the freezer tonight. Maybe some noodles too.
When I don't have a lot of time, I make unstuffed cabbage (just shred or chop, then put everything in layers). It's not very pretty, so I still roll them for company, but it's just as delicious and way less work.
