I seldom top them; generally am more of a dipper (any dipping sauce, really...ketchup, bbq sauce, horseradish sauce, garlic mayo, cheese sauce, whatever). If they're fresh out of the fryer and accompanying proper fried fish, I'll put malt vinegar and salt on 'em.
I find that topping fries makes them more soggy than I'd prefer too quickly. Even the malt vinegar with fish and chips can do that, but it's worth it.
