My husband tells me that I make Eggplant parm just like his grandmother from Italy did, I don't know I make it but I can't stand eggplant. It is very time consuming and I spend half the summer making it. Cooked eggplant does not freeze well. One important trick, after peeling and slicing to about 1/4" round slices, layer in a colander and sprinkle Kosher or Sea salt on all the slices, put a plate on top of the eggplant and a heavy can on top of the plate. Let it drain for at least an hour, rinse the slices off and pat dry throughly.

Dinner tonight will be Swedish meatballs and egg noodles. Cool here right now 61 degrees, waiting for the nor-easter.

Thanks for the many ideas here regarding eggplant. I also have found a ton of recipes online. Sounds like there are endless ways to prepare an eggplant. I will give it a try. The big thing I remember is that they don't seem to have a lot of flavor--that they absorb the falvors you put on them like a sponge. So, depending on what you put on them is what they will taste like.

Tonight will be a small chicken, seasoned with lemon pepper, roasted on the rotisserie. Side dishes will be roasted red potatoes with rosemary and collard greens.

Mikens-slice eggplant lenghtwise, put in colander, sprinkle w/salt, let sit, drain and rinse. Brush with little olive oil and just bake a short time til soft. Mix ricotta,mozz, parm, salt,pepper,egg,dash of nutmeg. Put a good dollop on eggplant roll and put in baking dish with a little sauce on bottom. Cover with sauce, parm cheese and bake.

Too tired to cook last night so the chicken will be cooked tonight. I am thinking that we will oven fry it with some sort of dry rub spice added to the breading. Last night for dinner a lovely chili mac mre. The kids are truly getting a kick out of these things. Kids split some spaghettos and a chili with beans mre. Tonight though we really have to cook a real meal. So along with the chicken I will make a baked potato with canned veggies on the side. I really can't wait to go on our big shopping trip. I miss my fresh produce.

That good old standby, baked chicken. I bet half my posts in this thread are baked chicken.

Probably rice and broccoli on the side, my toasted almond rice pilaf if I get ambitious.

I'm so sore from working out that I don't know what I'll manage!

I wonder how many minutes on the elliptical I'd have to do to eat 17 of Amber's eggrolls...

Morning all, eggplant recipies are making me hungry! I'm working the next three nights so no cooking for me. Will be interesting to see what hubby makes for himself!

I feel like I have been eating "bad" lately (i.e. too much food!!), so tonight may just be a big ole salad.....but that's not very fun when there are so many other options!! grrr......

Might have some leftover chili too, or we'll put it in the freezer.
