Thanks, Lacey. That sounds much easier to make than Parmigana. I'll have to get brave & try it soon! Yum, yum!

Elston how was the fair food? Lots on sticks?

Finishing off the "oops stew" that turned out so good.

Elston that sounds wonderful. I think I am going to make spaghetti tommorrow. Salivating down here in Tx.

All those eggplant recipes sound tasty too. Oh I can not wait to go to the store.

We had a good time at the fair.....but the food was a dissappointment..

They didnt have anything on a stick. I had a BBQ brisket sandwich.....the stand smelled wonderfully of hickory smoke....but I think he was just keeping a little smokey fire going for fragrance....I dont think my fatty piece of meat ever saw the grill. DP had funnel cake that was ok but nothing special and on the way out we had soft serve ice cream cone that was good.
The day was beautiful, the drive was nice, the fair was only so-so. HUGE PUMPKINS were amazing.
This was a relatively small fair.....the 4 H kids had done well with their animals and home crafts.

I did have to cook supper when we got home....swordfish steaks and rice and green salad and tomato.

We have an annual Grape Stomp held at the winery up the road. Tons of crafters and an absolutely huge, wonderful selection of food stands. Shrimp on a stick, pork chops on a stick, ribs, much more and of course corn dogs.

LOL Anything on a stick has to taste good at a fair/festival right?

Well we ae the meatballs and egg noodles for lunch, so now I have to figure out what to make for dinner.

Mica, the rollatini is so simple to make, I make mine the same as Lacey with one exception, I bought the Bobby Flay top of the oven grill and I grill the eggplant slices for 3 mins. on each side

I am always growing and making eggplant. I hate eggplant, hate it, hate it.
