Last night was tequila shrimp for me and a grilled chicken cutlet for DH. We both had sides of brown rice and steamed green beans.



Cuisinette - Thank you so much for the tips re silicone bakeware. I never before heard it has to be conditioned, or was easily scratched.


I'll let y'all know how the silicone pan worked out after I try it later this week

Tonight will be Chinese dinner night.

I will boil some Basmati rice. Along with it we'll have broccoli, white cabbage, sweat peas, carrots (these I have at home, will see what the grocery store offers today...) and maybe something more in a hot chili sauce.

Morning all.

Amber that sounds delicious and now I have an exec decision to make-I have all ingredients but was planning a beef/veg stew-loaded with carrots,celery,mushrooms, pearl onions, parsnips,peas.

Everyone's sounded great.

MWBW-Dorr Co is supposed to be beautiful-apple country.

I had no idea what I was going to do tonight... Now I think it'll be stir fry beef and veggies w/rice. Thanks for the nudge!

I think if I was lucky I slept maybe 2 hours last night!! This is not going to be a fun day! Ugh! Well, some of it will be fun as I am babysitting my 2 grandaughters later while my DIL gets her hair done. That I will enjoy. Have no idea what dinner will be yet---still drinking my morning coffee. Will get back later and post that.

2 hours cyn??? How can you live through the day?

Good afternoon, MM; good morning, everyone else

Tonight will be All Season Broiled Chicken, peas in the pod and whipped potatoes. Yum!


All Season Broiled/Grilled Chicken

1.5 c. chili sauce
3/4 c. red wine vinegar
1.5 Tbsp. prepared horseradish
2 small cloves garlic, halved
1 tsp. salt
4 bone in chicken breasts

Mix chili sauce, vinegar, horseradish, garlic and salt in a bowl. Reserve 1/2 of the marinade. Add chicken to bowl and turn to coat. Cover; marinate in refrigerator for about 5 minutes.

Preheat grill or broiler. Remove chicken from marinade; discard marinade in bowl. Place chicken on grill or on broiler pan.

Grill or broil chicken, turning and basting frequently with half the reserved marinade, until juices run clear when meat is pierced with a knife, about 30 minutes.

Heat remaining reserved marinade in a small saucepan, stirring occasionally. Serve hot alongside chicken.

It isn't going to be easy. I'm an 8-10 hour sleep a night sort of person and don't do well with this little sleep. I pulled something in my knee a week or so ago walking the dog and then did it again yesterday so I think that is what was keeping me up. It's been pretty uncomfortable--especially when I'm laying down. Course planting the trees the other day didn't help either. Guess it's just time for this old body to take it easy for a few days!!

We are planning to go to the "Cumberland Fair" this afternoon; I imagine we will eat a lot of "fried things on a stick" so don't know what we will be interested in when we get home. It is an absolutely beautiful fall day in Maine....cool and clear and bright and the leaves are turning...what a glorious day to be out and about.

Welcome to the world of insomnia I sure hope you don't have to stay long! It's rough not getting 8 hours uninterrupted sleep though I wouldn't know what that is since I've not slept more than 4 hours at a time for a year now. Hope you get some tonight!!!!
Maybe a good bowl of warm soup tonight and a cup of sleepytime tea before bed? Hope your knee gets better soon....
