That reminds me - I had my first Velveeta experience the other night....

Hub was watching TV and feeling peckish for a wee snackette, so I made my first attempt at Queso - I didn't have a recipe handy so just melted down some Velveeta (quite a hunk) with equal amount of low fat cream cheese, added a couple o spoons of salsa and a handful of chopped jalapenos from the jar, along with some of the juice, and stirred it all together.

He loved it, said it was better then the restaurant version!

Happy Wednesday. I am working tonight so hubby is on his own, I'll probably pick up a salad to eat at work, I really could go for some pasta tho! Enjoy the day...

Not sure yet. We might go out after looking at houses, maybe we'll just pick up some Chinese or Thai, or some tamales.....who knows?

I can't wait to make that crab and corn bisque this fall though! It is still in the 80s here so I haven't had the typical fall cravings ... Yet.

Yep, cooler here so between that and a trip to the local veggie market was all the insperation needed. It's back up to the 80s now but another cool front is on the way. Understand though, I live in Louisiana so 60s is cold for us.

I'm with JimJ and Cyn! Let's all kick back, put our feet up, throw something on the grill/in the oven/on top of the stove, and let all the madness of the world just pass us right on by! (They ain't gonna miss us!)
