Tonight is Chicken Marsala tweaked a bit to make it low fat
4 thin chicken breasts (pounded)
1/2 tsp. salt
1/2 tsp. coarsely ground black pepper
2 tsp olive oil
2cups sliced mushroom (freshif avail)
2 tsp. all-purpose flour
1/4 cup Marala
1/4 cup reduced sodium chicken broth
Sprinkle chicken with salt and pepper
Heat oil in skillet over med high heat. Add chicken and cook through about 3- minutes on each side. Transfer to plate and keep warm.
Add mushrooms to skillet and cook, stirring frequently until browned about 3 minutes. Sprinkle mushrooms with flour stirring to blend. Add the Marsala wine and broth..bring to a boil. Cook stirring occasionally until sauce thickens for about 3 minutes. Spoon sauce over the chicken.
Ok this may sound dumb but where do u get marsala wine?

Tonight for dinner, not sure yet. Football was rained out last night so we may have make up practice tonight. Soooo it may be pasta, it may be something quick and easy like a sandwich. Have not decided yet.
Steak Medici last night. It was only my second time trying to make it. Turned out okay, though. Sided it with thin sliced potatoes sauteed in a little butter with garlic and thin sliced onions. Wife and kids liked the meal... guess that's all the matters.
My wife isn't a big fan of rice but I am. So she will boil a couple boneless chicken breasts and split the broth. She cooks noodles for her chicken and noodles with half and fixes my rice for chicken and rice in the other half.

Pizza for lunch and for supper non traditional soft taco with seasoned meat, lettuce onions, tomato, cheese and refried beans. I have some chili I can serve with it as well.
