Today I am going to make a one-pot dinner. I'll spray the pot with Pam then put in about 5 pork chops for about 5 minutes on medium high. Then I'll add 4 diced-up potato pieces, half an onion, 2 to 3 cups of chicken broth, some carrots, some mushrooms, and a little bit of salt and pepper. Once the meal starts to boil, I'll turn the knob to low, cover the pot, and let it simmer for about 40 minutes, depending on the tenderness of the potatoes. There you go! I have diabetes and hubby is accomodating with letting me trying different diabetic recipes. I love this one!

That sounds good. Do add flour to the broth to thicken it or does it get absorbed/boiled off? Do you serve it over anything?

I mostly make "healthier" meals (more chicken, NO frying, etc) - if anyone ever wants the recipes.

Tonight is, however, meatloaf-mashed potatoes-green beans - so not ALWAYS healthy

Really though, we eat alot of chicken and I make it different ways, different sauces, etc. (I don't care for fish, just some seafood).

One thing that's great is the Weber line of seasonings: Kickin Chicken - Yummo!

Eyhossenlopp-sounds good. Is there anything better than one pot meals? Easy to make, easy to serve, easy to clean-up. Enjoy.

Flamingo-when I make meatloaf I get the 95% lean beef and use oatmeal rather than breadcrumbs-at least I think I'm eating healthy that way.

Thanks for posting the Chicken Fried Steak for me again Cyn! Ok...I have one question....how long does it take for the steak to be cooked? Once its browned is it cooked? Its done? and .......ummmmm sheesh I can't remember what I was gonna ask...

Oh yeah! do i cook it on high - med?
