Tonight, lucky me...Harris Teeter had those wonderful shrimp on sale and the price was so good hubbie could not just walk by it. So tonight he's doing the dinner thing.. his famous shrimp which is good cause I'm needin' a break..I'll make a baked potatoe and salad. The last two days seem to have lasted forever, I am so tired today. Hopefully by tomorrow I'll have a bit more energy and imagination to figure out a good dinner too!
Today I am going to make a one-pot dinner. I'll spray the pot with Pam then put in about 5 pork chops for about 5 minutes on medium high. Then I'll add 4 diced-up potato pieces, half an onion, 2 to 3 cups of chicken broth, some carrots, some mushrooms, and a little bit of salt and pepper. Once the meal starts to boil, I'll turn the knob to low, cover the pot, and let it simmer for about 40 minutes, depending on the tenderness of the potatoes. There you go! I have diabetes and hubby is accomodating with letting me trying different diabetic recipes. I love this one!

That sounds good. Do add flour to the broth to thicken it or does it get absorbed/boiled off? Do you serve it over anything?
Thanks for posting the Chicken Fried Steak for me again Cyn! Ok...I have one question....how long does it take for the steak to be cooked? Once its browned is it cooked? Its done? and .......ummmmm sheesh I can't remember what I was gonna ask...
Welcome back LaseyEX---we've missed you here. So sorry to hear about your flight back but it is another memory to add to so many others I'm sure! I did prepare crazyworlds chicken Marsala last night and it was good but I rushed it because I wanted to have the kitchen all clean before American Idol came on. Hubbie said if I'd let it cook a bit longer it could have been better. The chicken was done but the sauce hadn't cooked down enough. Oh well it was still tasty. I will try it again but on a night when I don't need to hurry it or I'll start it earlier. Last night was just crazy anyhow with the weather. I would not have gone out in that no matter what!! We had tree branches beating against our house and the windows were shaking...just really crazy weather!!
I one upped you last night. We just threw together leftovers since I didn't want to cook. American Idol is too important for me to miss!
