Chinese: I am doing fried rice, home made egg rolls and Asian meat balls. I am also having our first batch of garden fresh green beans...Yummy!!!

Alm's Tomato/Cucumber Gulash!......For tonight....

You need:
1 small pkg. of ground meat
1 onion
1 egg
2 Tbsp bread crumbs/or shred one whole wheat bun or Kaiser bun or dinner roll)
salt and black pepper
dill fresh or dry ( dry is faster)

1 English cucumber
2 large tomatoes
1 large onion
2 Tbsp. dry dill
salt and black pepper to flavor

Prepare meatballs:
In a bowl put ground meat,add finely diced onion,egg,bread crumbs,salt and pepper to taste, and 1 Tbsp. dry dill
Mix by hand til all nicely mixed. ( now my secret... if you have a food processor, throw the mixed flavored meat in it and make it smooth ,almost like Liver sausage, but not too soft)
Put bowl in fridge.

Saute:

Take a good sized pot and add 2 Tbsp olive oil.
Warm up gently oil and add diced onion and fry for 2 min,til onion is glazed. Add diced unpeeled cucumber,stir and add diced tomatoes,stir and add dry dill,salt and pepper to flavor. Put all on low heat. Now take meatballs out of fridge and roll med. sized meatballs with your hand and drop them all evenly in the pot. ( I always have a little water bowl next to me to dip my fingers in , in case meat sticks to you)Once all meatball are in the pot, keep them a touch apart and put lid on and finish cooking on slow heat for 30 min. give or take. Once towards the end you can check and separate meatballs with a big spoon, in case they stuck to each other.

With this I serve white rice,nothing else. Delicious!!!

***If you are cheap or have to safe money, you can omit meat all together, or instead of meatballs, you can throw diced chicken breast in and cook it the same way!
