We are having stuffed game hens, asparagus and green salad. I love game hens, they always seem like a gourmet meat on a fixed budget.

Today's our 22nd anniversary, so we are grilling steaks, having baked potatoes, salad, and a lovely bottle of wine.

From last night: Leftover fried chicken from mom's, green beans with almonds, biscuits and thick cream gravy, and I transformed mom's mashed potato leftovers into a baked potato whip with chives, bacon bits, and ranch dressing.

Tonight: Beef enchiladas, Mexican rice, and refrieds.

No going out as mom thinks she is coming down with a cold. So she may be a bag of grits. She is picky eater. Can't please her unless at a buffet and I'm not making a buffet for two. A rotisserie chicken sounds good. Not as good as fried but will do. A side of deli carrot salad and a jar of pickled beets might be the course of action.

OK stick some bacon strips on a cookie sheet or broiler pan put that in an oven for about 20-25 minutes @ 275º check for your preferred crispness. My daughter has nagged me all week for her fav meal. So chicken and dumplings tonight. I am feeling kinda homey so I may make is special and pick up an apple pie and ice cream.
