Last night I sliced some potatoes up and laid them down on a sheet of foil. Then I mixed some olive oil and Italian herbs in a bowl with chopped zucchini, peppers and carrots and laid that over the potatoes. Then I cut some chicken breast into bite-sized pieces, coated them with a mix of Italian herbs and lemon juice, and stuck those pieces over the veggies.

I finished it all off with a dusting of parmesan cheese and then sealed up the foil and stuck the packets in the oven for about 35-40 minutes. They came out delicious!

Ok, so, y'all, I already posted I was making a Pear Tart, but I can't tell you how good it is. Very basic...puff pastry, fresh pears, etc. There are many recipes online. I don't know why I never buy fresh pears, but I will do it more now.

Stir fried chicken blackened and caramelized in a sweet and hot garlic chili sauce. Sides of mixed veggies and buttered and herbed couscous.

Ice water with lemon, and a sliced orange for desert.

you are right on this...

pears, are just one of those items we take for granted,,,, I will look at a display and look for a soft ripe one,,,,but then remind myself to grab the green ones,,they are delicious too!!
