It's been cold and wet here for 3 days, so good soup weather!
Tonight we had a vegan Creamy Wild Rice Soup made in the InstantPot.
It was prepared with onions, garlic, celery, carrots, mushrooms, cannellini beans, wild rice, veggie broth, pre-soaked cashews (to make it creamy) thyme, oregano and sage. It was extremely tasty! Served with whole grain brotchen, (crusty German rolls) a small salad and a glass of cabernet.
Tonight we are having seared Rainbow Trout. I am also making spoiled brat a big fruit salad, plus I will roast some asparagus and make a small amount of sweet and tart beets. My granddaughter brought us 3 huge beets the other day and I can not get enough of them. I love fresh beets in the spring. Rain or no rain, shut in or not, they always make me think of the starting of the warm season.
