I bought a couple of poblano peppers the other day. I think I'm going to make chile rellenos for dinner tonight.

Happy Mother's day to all the moms! Dinner will be early here so we can have a Zoom family game night accommodating many time zones.

According to hubby/chef we'll be having Maryland crab soup, chicken cutlets, and spinach souffle. And I requested a custard-type pie for Mother's Day, so the chef will be making something like a buttermilk or chess pie. Looking forward to it all!

DH says he's going to grill hamburgers tonight. I didn't think I'd made onion rings again ever but I have a hankering so I think I'll treat us tonight. Thinking that if I get out the Dutch oven I just possibly might make less of a mess.

HAPPY MOTHER'S DAY TO EVERYONE! I am so sad that i can't be with my daughter and her family, but we will Zoom later. My husband and father-in-law will be grilling rib eyes and ribs. I will make potato salad and baked beans. It is a beautiful day here in Washington, 80 degrees, which is hot for us. Like many of you, I do feel blessed as no one in my family has Covid-19.

Tonight I had leftovers from the freezer (the Hunan beef I'd made a few weeks ago). It was MUCH better freshly-made, so next time, I will make only enough for a couple of days.

This is my first Mother's Day without my mom, who died last July, 4 months after a bad fall. So not a fun day ...

Tonight by my request my husband is making one of my favourite sandwiches. He bought some great oatmeal rustic bread. On that he spreads fig jam then layers goat cheese on top. He dices red pepper and red onion, thinly slices cucumber, avocado and tomatoes. All that gets layered with fresh basil.

I hope all of you who celebrate Mother's Day had a wonderful day!

Baked chicken, got to eat with family this evening too. Tator tots with the chicken, they were cooked in an air fryer also.
