I’m making cheese enchiladas with chile con carne sauce. I’ll make some borracho beans to go with and a salad. My avocado isn’t ripe and I really wanted some guacamole on the side.

Tonight we are having shrimp and cheese grits, biscuits, a side of garlic mushrooms, mango margaritas, and soft cinnamon roll cookies.

Pork roast with roasted potatos and carrots......plenty of pork left over, for sandwiches.

Leftovers here. Brats and peppers, pasta bolognese.

Pork tenderloin with sauteed mushrooms, roasted sweet potatoes, and a winter slaw with apples and cranberries.

Veal cutlets (tenderized/marinated with Lawry's teriyaki), long grain rice, & fried apples. I was sipping on a Mt Dew but switched back to water.

Thin boneless pork chops with yellow rice, garlicky green beans almondine, and apple sauce.

Open face sandwiches made with the sous vided roast beef from earlier in the week, caramelized onions, sauteed mushrooms, and swiss cheese. Smashed small yukon golds that had been steamed then fried.
