Hi, Mookster. Oh great! If you try making it, I hope you like it, too. I read what you were making for dinner too and sounds like you were trying something new as well. Your marinade (that combination of flavors) sounds delicious!! I'd like to hear how it turned out.
I'm headed to the farmer's market in search of beets today. And the marinade turned out adding a really nice flavor to the grilled chicken. I used Paul Newman's Lighten Up Cranberry Walnut and I'm already thinking of the salad that would be perfect with it - spinach, walnuts, feta, grape tomatoes, craisins, cucumbers. Yum!
Tonight,I will be getting together with some high school friends,a friend is visiting from Texas. So we are going to a Japanese-Chinese style All-you-can-eat. They have lots variety of sushies! Should be fun!
I bought a nice piece of Cod so I will be cooking this with a chermoula and herb crust, some nice couscous and a green salad and then for dessert chocolate crepes .
I've got more chicken in the freezer than anything else right now. I'm thinking I'll probably make some sort of pasta with chicky in the sauce. Or, I still have some green tomatoes, so maybe I'll cook them as though they were eggplant for eggplant parm, and use them as a base for a piece of chicken and some sauce and cheese and put a pile of spaghetti next to it. I'll let the plan percolate for awhile and see what finally bubbles to the surface.
