It surprises you that the New York City area has open racism? lol Look at all the different ethnic groups there. Has to be the most racist city per square inch. Tons of people who live on top of each other like animals. Of course there is going to be more racism.
On the other hand, while NYC isn't free of ethnic tension, when I lived there in 1992 when the Rodney King riots were going on in the LA, I feel because everyone mixes more due to the density of the city and using public transportation, it's probably better than in LA due to people being spread out more and being more isolated in SoCal.
Trump didn't ban people from "known terrorist countries". He did it to placate his fact-averse and anti-Muslim base.
In fact not one terrorist attack in the U.S. is linked to any country under the ban, and the biggest terrorist states on earth were specifically excluded (because he has hotels and business interests in places like Saudi).

If you want to do business with more clients, it is helpful to speak their language, since they may not have had enough experience yet to be proficient in English. It's a business thing.
I already mentioned this at least twice, what I said was my employees would be required to speak English unless it was to the benefit of the customer. I also said that someone that is bilingual would be an asset to the company.

No, this is a very wise business decision especially if the customers are predominantly English speaking customers. Many people are uncomfortable when someone is speaking a language they do not understand.

Then you would be violating federal law. The EEOC has clearly articulated the law’s position on English-only rules in the workplace: they are strictly prohibited except in very tailored circumstances. This issue has been litigated and settled by the judiciary many times over. I suggest you consult with legal counsel immediately if this is in fact your current practice.
Where my wife used to work the employees were required to speak English unless they were on their breaks or lunches and a memo on the bulletin board was placed denoting it. The Spanish speaking employees ripped it off and threw into the trash. Just another sign that they think they are above any laws or rules. Obviously there was no such rule at the sandwich shop or if there was they just ignored it.
That’s interesting. Which establishment is this? Is a sign like this still put up? Seems like both employers and employees around the country are in dire need of legal education regarding lawful practices at the workplace and employee rights.
