Interesting thread. I think formal dining rooms will become more scarce and be replaced by cafe's/eat in kitchens with enough room for a large table. I'm seeing it more and more with new construction requests.
Finishes:I'll go with stainless steel and 3" planks for hardwood floors.
Because Satan bought all the wallpaper manufacturers and HGTV sold their soul to the devil.
So funny. After stripping tons of wallpaper from my first home, I absolutely swore I would never have the stuff again. However, when I redid the powder room in my current house, it really needed something and I ended up putting up wallpaper of all things - grasscloth. However, I made sure to do it properly with sizing, etc so it could be easily removed if necessary. I couldn't believe I did it but I did succumb to the evil paper.

My parents built their "dream home" about a year ago, and there is no formal dining room at all. I don't know anyone who uses one at all, other than a couple times a year maybe.
Never thought my floral wall paper with matching borders, shiny brass fixtures, "bisque" appliances, mauve carpet, country blue rooms, and oak-wood everything, would ever go out of date back in the 1980's...

I actually use mine several times per week, even if its just me. It's a beautiful room & it makes me happy.
I will confess to having dinner in front of the TV about twice a week, though.
1. Stainless steel appliances - replaced by gray or white
2. Granite - replaced by quartz (which is way better anyway)
3. Dark hardwood floors - replaced by natural color after people figure out that dark emphasizes dust and scratches
4. Wood grain or linen look ceramic tile - it will just look dated (it is in EVERY new build in my neighborhood)
If stainless appliances are on their way out, no one told the retailers.
I just had to buy a fridge and you have 3 choices. 75% were stainless. Probably 15% white and 10% black.
My answer to the question is: "The ownership society."
