DH is gone for the week and with him, my motivation to cook.

Think I'll heat up a packet of vegetable yakisoba (CostCo) for dinner.

I had an Amy's veggie loaf frozen dinner for lunch. Came with mashed potatoes and peas.

Not impressed. It was just OK. I like Amy's vegetable pot pies, so I thought this might be good, too. Meh.

I'm not a full blown vegetarian, but I've decided to cut back my meat intake for my health.

I just had some Quorn chicken patties and it was delicious, just the pattie itself and whole wheat buns. I think I'll spruce it up with some veggies next time and maybe some mayo sauce.

I also saw something called Beyond Meat Beast Burger on sale and decided to pick up a few of those.

I had a garlic hummus and veggie-ham sandwich. And some raw baby carrots and sugar snap peas. Getting too hot to cook already.

Tonight moong/green lentil soup with cilantro chapatis,lime pickles,onion and tomato slices,lassi to drink. For dessert a mixed melon salad.

One skillet quinoa recipes are good. Last night I made quinoa with tomatoes, broccoli, spinach and beans.
Basically saute some garlic & red pepper flakes, add thyme and dill then 1 chopped tomato. (recipe said to use sun-dried but I didn't have any of those)
Add 1 cup of quinoa for 30 seconds and then add 2 cups of vegetable broth.
Simmer for 20 minutes (or until liquid is absorbed).
Once the quinoa had soaked up all the liquid, I added my spinach (I had frozen but I think fresh would've been better) and broccoli and a can of black beans (white or garbanzo would've been better but that's what I had!).
And YUM! And it's enough food for the rest of the week too

DH is working late and will eat there, I've been cooking snacks. A almond *flour* based zucchini bread and oat/nut/fruit bars.

So I think I will try the veggie dog, topped with peppers, onions and tomatoes.

Decided to go Asian / Bahn mi style dog: some kind of sriracha sauce, kim chee, cabbage, carrots, pickled daikon, green onions, jalapeno

Falafel in whole wheat wrap with spinach, lettuce, kale, and broccoli. Side of pita chips with salsa. All washed down with sugar free ice tea.
