Observed no paper towels at kitchen hand washing sink. Must provide paper towels at all hand washing sinks. Provided at time of inspection.
IV. Person in Charge/Demonstration of Knowledge
PIC was able to answer all basic food safety questions. Facility/ PIC must attend food safety workshop as required by the ownership change.
VII. Cooking, Reheating, Cooling, Hot and Cold Holding
Observed chili and blanched fries being improperly cooled. Food was prepared more than 2 hours prior and was holding above 70 degrees F. Must ensure foods are rapidly cooled using an approved method from 135-70 degrees F within 2 hours and then 70-41 degrees F or below within the next 4 hours. Foods were discarded at time of inspection.
VIII. Date Marking/Time as a Public Health Control
Observed chili improperly date marked and/ or not discarded when the date mark exceeded 7 days. Must ensure foods are properly dated and used or discarded within 7 days to ensure food safety. Food was discarded at time of inspection.
XI. Protection from contamination
Observed raw foods stored above ready-to-foods in prep top coolers. Raw food was moved below the RTE foods at time of inspection to prevent contamination.

Observed all cold TTCS foods holding at or below 41 degrees F. Hot foods were above 135 degrees F. Observed foods being cooled using an ice bath method. Must ensure to monitor temperatures frequently to ensure the food is properly cooled from 135-70 degrees F within 2 hours and then 70-41 degrees or below within the next 4 hours.

Observed chili and gravy held for more than 7 days under refrigeration not discarded. Food was discarded at time of inspection. Must ensure to properly date mark all refrigerated items and use or discard within 7 days.
IX. Consumer Advisory
New menu is missing the consumer advisory. Must provide some form of consumer advisory when serving any items that can be ordered raw or undercooked.
XI. Protection from contamination
Must clean facility and non-food contact surfaces more frequently and throughly to prevent contamination.

Observed digital thermometer used to measure cold holding temperatures not working.
Consumer advisory signs were posted behind the bar until the new menu is printed with consumer advisory printed on it.
