IV. Person in Charge/Demonstration of Knowledge (+) PIC has been to several trainings, and seemed to know what was wrong, he told me he forgot to date mark his foods.
V. Thawing (+) Thawing occurs in cooler.
VII. Cooking, Reheating, Cooling, Hot and Cold Holding (+) hot foods are cooked to 180 degrees F, sauces are cooled with ice wand, egg rolls and chicken are cooled in shallow pans, and were being cooled improperly, but were fixed by the end of the inspection
VIII. Date Marking/Time as a Public Health Control (-) No date marking at all. We had a long discussion about datemarking and they should be in compliance by follow up.

PIC Yueyungao for inspection. They made attempts to date mark. Facility was much cleaner than last time. They are willing to work with us, however I'm not sure about what is procedure here for cooling and date marking. I would like to come back with a Sanitarian 2 for some extra help in getting this facility into compliance. Thank you.

After inspecting the complaint it was not found any cockroach activities but observed the net of the back door was open and torn which the pest and rodents can easily get access to the kitchen area.
Though there was a language barrier but still comprehending what was saying. Was asked if they can provide the invoice of the last pest control, not possibleat this time but required to provide one by 6/29/2012 for fololw-up inspection.
The owner promised to provide the invoice and fix the back door.
