Manual/Mechanical Warewashing and Sanitizing "Observed the sanitization level in the 3 compartment sink at 0 ppm. At the time of the inspection the inspection the sanitizer was detached. The sanitizer apparatus was prepared during the inspection process. After being cleaned, equipment food contact surfaces and utensils shall be sanitized. Equipment food contact surfaces shall be sanitized. Utensils and food contact surfaces of equipment shall be sanitized before use after cleaning. The concentration was at 200 ppm after repair."
