    Observation: There a bucket of quaternary sanitizer that exceeded the required concentration. Corrected at inspection.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: In the walk-in coolers, fan guards were dusty.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: At the deli meat display case, items were ranging from 45 to 48 degrees. At the deli display case, the ambient temp was at 51 degrees
  • Separation from food, equipment, utensils, linens, and single service
    Observation: There were catering chaffing fuel sitting above vegetable oil spray near the dairy walk-in cooler.
  • Physical facilities maintained in good repair
    Observation: The floor in the deli department was in bad repair. In the meat walk-in cooler, the condenser unit was dripping water. The hand sink and three compartment sink in the deli department was not secured/caulked to the wall.
  • Outer openings are protected
    Observation: Exterior doors were not insect/rodent tight.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation: There was raw chicken and raw eggs stored over ready to eat foods in the meat walk-in cooler. There were raw eggs sitting on ready to eat items in the dairy walk-in cooler. Both corrected at inspection.
  • Cleaning frequency of food contact surfaces (non-PHF/TCS)
    Observation: The meat slicer was soiled in the deli department.
  • Raw animal foods separated from each other during storage, separation, holding, and display
    Observation: At the meat display case, there was inadequate separation of raw chicken and pork products.
  • Premises maintained free of insects, rodents, and other pests
    The presence of insects rodents, and other pests are controlled as required

    *Repeat* The dairy display cooler, from the shredded cheese to the Sunny D was ranging from 46-50 degrees. - Thermostat adjusted at inspection. The display unit with the cheese was ranging from 47-50 degrees.- PIC stated that this cooler will be discontinued and replaced by another unit.
