I discussed the Alabama Seafood Labeling Law with the owner, Saad Sherebini. The FSE serves seafood products. At the time of the inspection, the filters from the hood were down for cleaning.

The metal stemmed dial food thermometer was calibrated during the inspection with the owner, Mr. Sherebini. I gave the owner a handout of the Consumer Risk Advisory for the menu.

2-401.11 Store personal drinks below and away from food, utensils, equipment, linens, and unwrapped single service/single use articles/ 6 personal drinks improperly stored/ COS drinks were voluntarily discarded or removed, the surfaces were WRS, and the remaining personal drinks were placed in an acceptable area.This was discussed with the person in charge.

ADPH 420-3-22.02(3)(a) Provide at least one designated person with certification from an accredited program within the past 5 years, or verification of attendance of an accredited program within the past 12 months./ A worker had a certified food safety managers card that expired 11/19/2007.
3-501.16 Maintain potentially hazardous food at 135 F or above./ On hot holding cooked chicken 122F, 130F, beef patties 125F, gyro meat 72F/ COS all potentially hazardous foods out of temperature reheated to 165 F or hotter during inspection.

I gave the person in charge, Mr. Sedar, both the JCDH Food safety certification class schedule and the Online Food Handler Training bulletin.
