  • R4.5 Observed frost accumulation on walk-in freezer ceiling and ice accumulation on walk-in freezer floor. Observed ice formation on boxed Van Camp fish product. Discard any contaminated food. Relocate food to prevent possible contamination. Repair freezer and/or defrost.
  • 4.0 Raw wood at the floor/wall juncture inside the walk-in freezer. Seal the wood so as to be nonabsorbent and cleanable.
  • The following critical violation was observed today:
  • *3.2 Observed raw sausage stored above deli turkey breast inside walk-in cooler. Properly store raw animal foods below ready-toeat foods to prevent possible cross-contamination. Reportedly, turkey breast will be cooked to make turkey jerky. Reportedly, spinach bag stored next to raw sausage will be used as an ingredient in the sausage. Spinach stored in this manner may not be used for any ready-to-eat foods.
  • Note: Freshly painted walls in the food prep area and additional lighting added inside the walk-in cooler.
