  • *4.4 Observed the final rinse temperature of the dish machine below 180°F. Maintain the final (sanitizing) rinse of the dish machine at a minimum of 180°F in order to effectively sanitize. Manually sanitize in the 3-compartment sink until repairs are made. PIC placed a work order for repairs today.

  • *4.4 Observed the QAC sanitizer contained greater than 400ppm. Maintain QAC sanitizer at 150ppm- 400ppm per manufacturer's specifications.
  • Note: Observed HG-200 Drain Maintenance System was installed in the plumbing line by the three vat sink and by the garbage disposal in the dish area. A letter was sent to Medina City Schools from the Medina County Sanitary Engineer dated 12/21/09 regarding the use of this chemical. Please refer to this letter.
  • Reportedly the health timer on the milk machine is frequently checked.
  • Reportedly, four Cres-core hot boxes, and a fryer are unused equipment. Remove unused, unnecessary equipment from premises.
