  • *4.5/4.6 Observed food debris on the tongs at the hot dog roller (not yet in use). Wash, rinse, and sanitize food contact surfaces, used with potentially hazardous foods, every 4 hours.
  • 3.5 No identifying labels observed on the self-serve donut case. Foods shall be properly labeled. Ingredient sheet is available.
  • -Observed proper retail chemical storage.
  • -Observed proper cold and hot holding temperatures.
  • -One accurate long stem thermometer available for use.

  • 6.2 Repair the non-functioning light fixture in the Coke refrigeration unit.
  • 4.8 Provide a lid for the container holding coffee filters, to prevent consumer contamination.
  • Note: Operation added a new Metafrio Solutions ETL commercial listed freezer unit, with an Amana Microwave used to hold milkshakes.
  • Observed two Big and chewy Chocolate chip granola bars with a sell-by/use-by date of 9/2/11, and Slim Fast sweet and salty chocolate almond bar with a sell-by/use-by date of 9/1/11.

  • *3.4 Observed the jalapeno cheese sticks on the door holder mounted on the display door were holding at 48°F, the air temperature in this holder was 51°F. Relocated the cheese sticks to assure 41°F and below is maintained.

  • 5.1 Repair the leaky Espresso station coffee drink machine. Equipment shall be maintained in a state of good repair.
  • 6.2 Repair the non-functioning light fixture above the ice machine.
  • Note: Operation added a new Federal Sandwich Case Model number LPRSS3.

  • Relocate the eggs to the tray.
  • C/*3.1 Observed a dented can of chicken noodle soup. Packages of foods shall be in good condition to protect the integrity contents and to prevent potential contaminants.
  • R/6.4 Repair the damaged the ceiling tiles in the rear storage area as needed.
  • 4.4 Door seal on the walk-in cooler, and Miller Lite display door was damaged. Repair these areas.
  • 4.8 Store the coffee filters in a covered container or in the cabinet to prevent consumer contamination.
  • 3.5 Relocate price tags covering sell-by or use-by dates on the retail food items.
