Discussed with operator that facility will remain a medium risk facility as facility is only cooking and serving, and not cooling. Discussed with operator that should commercial cold-holding equipment be obtained in the future, changes in the menu can be discussed. Until then, the homestyle refrigerator and refrigerator/freezer units are not adequate for cooling. Temperature of string cheese and yogurt, being held in ice baths, was less than 45 dF. Facility is serving cheese pizzas from Giuseppe's for dinner today. |
