The following temperatures were measured (degrees F): Steam Table - Cream of Vegetable Soup - 176.4; Sandwich Line - Sliced Deli Turkey - 44.6 to 46.2, Tuna Salad - 44.8, Egg Salad - 41.0 to 42.6; Milk Dispensing Machines - Milk - 45.4, Chocolate Milk - 40.2; Salad Bar - Cottage Cheese - 46.8. Discussed cold holding with the operator focusing on the most effective way to store potentially hazardous foods in ice. The Final Rinse Temperature on the Mechanical Dish Washing Machine was 186 degrees F. Report e-mailed.

02/19/2015InspectionDiscussed deficiency with the operator. Soups are no longer being placed in the self-service line and no cracked eggs were observed in the walk-in cooler. Shell eggs are kept in the original cardboard boxes until use. The following temperatures were recorded (degrees F): Cold Milk in Cafeteria - 39.9, Chocolate Milk in Cafeteria - 43.9, Ham Salad - 44.4 & Sliced Turkey - 43.9 in Sandwich Cooler, Precooked, Breaded Chicken in Walk-In Cooler - 36.2, Chicken Rice Soup cooking on stove - 174.8. The following Air Temperatures were recorded (degrees F): Vegetable Cooler - 40, Walk-In Cooler - 36. The final rinse temperature on the automatic dish washer was 184 degrees F. Report e-mailed.
